TASTING NOTES

2007 RICHARDSON CENTRAL OTAGO PINOT GRIS  

Winemaker's Description:

Inviting bouquet reminiscent of lychees, pears and creaming soda.  Lingering palate, full flavoured and balanced. The subtle barrel oak treatment with no oak pick up served to  meld all the portions together producing a gentile Pinot Gris that will age gracefully.

Mount Koinga

Two and three cane vsp trellis. Leaf plucking after verasion.

WINEMAKING

30% barrel ferment using aged barriques
30% wild ferment

Thirty percent of the free run juice was put directly to oak and left to undergo natural ferment.  This created the mouth-feel component of the wine. The remainder fermented slow and cool allowing flavours to develop and  preserve.  Once finished but still be a lot of yeast in suspension, the tank portion was moved to age in used barriques.  In September the wine was blended, gently fined and bottled.

CELLARING

This wine is from a new vineyard so there is no cellaring history, however, the chosen fruit along with the style of wine making, has created a wine that can be consumed now or cellared up to 5 years from harvest.

FOOD MATCH

Pinot Gris is the quintessential food pleaser, this wine will cross reference over red and white meats, fish, cheese and vegetables. Experiment!
